Our brick ovens date from 1945.  The fragrance that swirls from the ovens tells of generations of delectables that have rested there - imbibing the heady, specially blended, hardwoods' smoke - for as little as 12 hours (for mini salamis) or for as long as three weeks (for the spectacularly delicious Westphalian and Schinkenspeck hams).
